Abstract

Samples of four types backed goods with fruit tissues such as·panetone, cake, doulghnuts and bread containing carbohidrate swelting matter were examined for sanitary quality. The method for recovery of ligh filth was the pancreatin digestion method with sieve. It was found that 27 (45,0%) of the samples had unhealty handling in the manufature or were unfit for human consumption because 15 (25,0%) showed insect fragments, 9 (15,0%) showed rodent hairs, 6 (1O,O%) contained whole insects, 5 (8,3%) contained insect larvae and 5 (8,3%) contained mites. It was concluded that the industrialized products were in more good sanitation condition than the confectioner's shop products.
