Abstract

In order to use the high mango surplus produced in our region and mainly because of the 20% losses observed during its transportation and commercialization, it was decided to develop a work on small scale mango vinegar production. Simple and easy to apply techniques have been developed by people or technicians interested in the domestic production of vinegar on an industrial scale. The Orleans Method for vinegar production was applied together with physicochemical analysis of raw material and acetic fermentation.
